It’s been a big year for us and I’m so excited about the holidays and celebrating with our little growing family. Instead of traveling home for Thanksgiving this year, our family is coming to us—thanks guys! I promise we’ll make it worth your while! As much as I love heading home for Thanksgiving, I won’t miss the crazy airports and nightmare travel plans that seem to come with it. What’s also wild is that in six years in Chicago, this will be the first time we actually spend a big holiday in Chicago too, which will be really fun and special! As I’m sure you can imagine, I’ll quite literally have my hands full and will be relying on everyone else to pitch in and help cook Thanksgiving dinner. One thing I do have covered? The Thanksgiving desserts! Well, at least part of it anyway. I’m not a huge dessert fan, but I do love a treat during the holidays, so I whipped up this apple pie recipe that’s actually not all that bad for you! If you’ve ever wondered how to make apple pie, let me tell you it’s super simple! Like, quite possibly one of the easiest pies you’ll ever make in your life. I’m walking you through the steps in today’s quick video! My serving suggestion? Add a scoop of vanilla ice cream on top. Since I don’t eat much dairy, I opted for coconut milk ice cream and it was absolutely delicious! You can find the full recipe below too! Healthy Apple Pie Recipe Healthier Apple Pie 2017-08-11 17:21:47 Write a review Save Recipe Print Ingredients 1 frozen pie crust 3-4 Granny smith apples, 1 Tbsp lemon juice 1 tsp cinnamon pinch nutmeg Crumble Topping 1 cup Bob’s Red Mill old fashioned or extra thick rolled oats ¼ cup flour 1 tsp cinnamon 3 Tbsp brown sugar 3 Tbsp coconut oil ¼ tsp salt Instructions Preheat oven to 400 degrees. Peel apples and slice thinly. Toss with lemon juice, cinnamon and nutmeg. In a separate bowl, combine rolled oats, flour, cinnamon, brown sugar, oil and salt. Mix until it forms a crumbly topping. You want all the ingredients to be slightly damp from the oil. Pour the apples into the pie crust and top with crumble topping. Press lightly on the top. Bake for 40-45 minutes until golden brown.
