People had told me that kids keep you busy, but I honestly didn’t fully understand until we had Owen. And, even more so recently as he becomes increasingly more mobile, busy and opinionated. I always start my day with a plan to cook homemade food for Owen to keep on hand and also a healthy, home cooked meal for us, but life happens and my plans get derailed on a regular basis.

A meeting runs late, I don’t have time to think about what to cook, but I also don’t want more takeout. I think we burned ourselves out on takeout in the first 6 months of Owen’s life, haha!

I love the concept of ordering meals for a week online, but if I’m being honest, I rarely have thought that far ahead and actually ordered them. Which makes the meal kits super handy because I can swing in at a moments notice and pick one up. Talk about the quickest grocery run ever!

My local Mariano’s had 4 different options, all which looked really yummy! There was an empanada bowl, meatloaves (which really just looked like oversized meatballs!), steak with veggies and pretzel-coated chicken. I’d been craving Italian, so I went for the meatloaves that had a marinara sauce and spicy green beans on the side.

Rob and I were leaving for Denver the next day, so I was thrilled to get enough food for one tasty dinner, but not have a bunch of leftovers or additional ingredients that wouldn’t get used. It was quick to prepare and easy to cook. I love that all the ingredients are pre-measured, so you don’t have to worry about how much to add. Because of that, there’s less waste, which is so important to me!

Our meal was really, really good! I did skip the provolone in the middle of the meatballs because I try not to eat too much dairy, but despite that, they were awesome! Rob loved them—which is always a win in my book! I felt so much better about making a home-cooked meal than ordering take out again too!
