Baked Gnocchi with Roasted Vegetables

A simple one-dish meal that's vegetarian and hearty!

Ingredients
  

  • 1 zucchini diced
  • 4 oz mushrooms sliced
  • 1/4 red onion large dice
  • 1 small bell pepper large dice
  • 1 bunch broccolini cut into 1" pieces
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional
  • 2 cups marinara sauce
  • 1/4 cup water
  • 17.5 oz pre-made gnocchi (1 package) or homemade
  • 1/4 cup fresh basil chopped
  • 1/4 cup shredded parmesan cheese

Instructions
 

  • Preheat oven to 425 degrees F.
  • In a ceramic or other oven-safe baking dish, add all veggies and toss with oil, garlic, Italian seasoning and red pepper flakes. Season with salt and pepper. Roast for 15 minutes.
  • Remove from oven and add marinara, water and gnocchi. Stir to combine. Bake for another 15 minutes, until gnocchi is tender, but not overcooked.
  • Serve with fresh basil and parmesan on top!
