Baked Gnocchi with Roasted Vegetables

- 1 zucchini diced
- 4 oz mushrooms sliced
- 1/4 red onion large dice
- 1 small bell pepper large dice
- 1 bunch broccolini cut into 1" pieces
- 2 garlic cloves minced
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- 1/4 tsp red pepper flakes optional
- 2 cups marinara sauce
- 1/4 cup water
- 17.5 oz pre-made gnocchi (1 package) or homemade
- 1/4 cup fresh basil chopped
- 1/4 cup shredded parmesan cheese
Preheat oven to 425 degrees F.
In a ceramic or other oven-safe baking dish, add all veggies and toss with oil, garlic, Italian seasoning and red pepper flakes. Season with salt and pepper. Roast for 15 minutes.
Remove from oven and add marinara, water and gnocchi. Stir to combine. Bake for another 15 minutes, until gnocchi is tender, but not overcooked.
Serve with fresh basil and parmesan on top!
