As of late, when it comes to a quick pasta dinner, this has been our (the roomie & me!) go-to dish. I have to give credit to Arleigh for whipping up the combo in the first place, but it is so tasty that I find myself making it whenever I’m at a loss for what to eat.
The easiest part is the sauce, which is actually super low-cal, low-fat salad dressing created by a local woman who’s company is called Pigtale Twist! We’re obsessed with the Ridiculously Garlic Blue Dressing. It’s got the perfect amount of punch from the garlic and blue cheese to brighten any salad or pasta dish. She’s got a few other dressings and sauces and man is she wonderful! We met her at one of our favorite groceries, Plum Market, where we sampled her caramel sauce and chatted with her. We’ll be sure to come up with some excuse to throw a party or dinner that involves this!
The recipe isn’t all that exact, but here’s what we usually sauté to toss with the pasta & dressing!
Brussel & Blue Cheese Pasta
- minced garlic
- chopped onion
- chopped brussel sprouts
- chopped kale
- crispy pancetta
- curly pasta
- Ridiculously Garlic Blue Dressing
- Sauté the onion in a bit of olive oil. Add brussel sprouts and sauté for several more minutes. Add garlic, kale & season with salt and pepper. Cover the pan and steam for a few minutes to cook the brussel sprouts all the way through.
- Toss with hot pasta and the dressing & you’re ready to go!
