Peach Tomato Salad with Burrata
This summer salad takes the best summer produce and creates a flavorful and simple salad that everyone will love.

- 4 medium tomatoes preferably heirloom tomatoes, sliced in 1/2-inch wedges or slices
- 3 ripe sweet peaches cut in half, pits removed
- 1 ball of burrata cheese or fresh mozzarella if you can find burrata it is amazing!
- 1/4 cup fresh basil chopped
- balsamic vinegar or balsamic glaze
- extra virgin olive oil
- kosher salt & black pepper
On a hot grill, brush the flesh side of each ripe peach with a little olive oil and grill until they are browned, flip and do the same. Set aside and cut into wedges
On a platter, layer fresh tomatoes on the plate. Add peaches wedges on top. Next, pull apart your ball of burrata and nestle it in between the peaches and tomatoes.
Sprinkle with fresh herbs and finish with a drizzle of balsamic vinegar or balsamic glaze, and olive oil. Season with salt & pepper. You can use a finely ground salt or a nice flaky sea salt.
