Friday is here, thankfully! I’m looking forward to a relaxed weekend. I was up super late almost every night this week getting caught up on work and hanging things on our new apartment walls.
Now that it feels a little more like summer here, I’ve been whipping up Greek yogurt parfaits like it’s my job. It’s the perfect light breakfast or afternoon snack and tastes just like dessert even though it’s healthy! It’s also insanely easy, which I like!
I used stem-less wine glasses, but any glass cup works. Start with a layer of non-fat plain Greek yogurt and add a sprinkling of your favorite granola and fresh berries. Then repeat that process for the second layer. I sprinkled a little dusting of cinnamon on top too. It’s the perfect balance of sweet, tangy, creamy and crunchy! If you like your yogurt a little sweeter, just add a squeeze of honey.
