Also known as French potato salad! The first time I ever heard of, or ate, French potato salad was when I was in culinary school. In my mind, potato salad was a mayo-filled, heavy dish that I wanted no part of, so I was skeptical at first. I’m glad I got over it because this mayo free potato salad is one of my favorite sides to make for summer get-togethers. It’s easy, holds well and won’t spoil like it’s gloppy cousin. The vinegar in here gives it a nice tangy flavor and the dill keeps it super light and fresh!
I love serving it at picnics and BBQs, but lately I’ve been eating it with my sandwich at lunch in lieu of chips! Pretty dang tasty. What’s your take on potato salad — are you a fan of either version?
