It’s almost Friday—what are you up to this weekend? We’re going to a wedding on Saturday night for one of Rob’s co-workers. I’m so excited! It’s been so long since we’ve had a wedding to attend or any other excuse to get dressed up! I’m still not sure what I’m going to wear yet—it’s black tie optional!

Other than that, I plan on spending as much time as we can outdoors! It’s a little harder with Owen’s nap schedule, but we usually make it out for a morning and afternoon walk. Lately, we’ve been heading to a neighborhood spot for happy hour before we head home and start his nighttime routine.

Something else that I’ve added to my summer bucket list is weekly trips to the park for picnics! The weather is too nice to not get out, and as long as there’s a big tree for shade, we’re golden! Speaking of picnics, and really the whole reason for this post, is this yummy Mediterranean chickpea salad.

easy healthy recipes: Mediterranean Chickpea Salad

Several years ago, my roommate was a nanny and I would meet her and the kids she looked after at the park and I’d always pack this simple salad. Either as a side dish, or I’d scoop some on top of greens and add grilled chicken to make it a full meal.

Memorial Day weekend is in a few weeks and is a perfect side dish for any parties you have planned! So like I said, it’s easy to make and keeps well! Just make it the night before your party—I think it tastes better after it’s marinated for a night—and you’re good to go.

We’re actually heading to Denver for Memorial Day weekend as we have another wedding to attend, but I’m hoping we can do some sort of grilling one night too!

Mediterranean Chickpea Salad

Ingredients

1 can chickpeas, drained and rinsed
3/4 cup cucumber, diced
3/4 cup tomatoes, chopped
2 Tbsp fresh chopped mint
1/3 cup red onion, diced
2 Tbsp olive oil
2 Tbsp red wine vinegar
S&P to taste

How To

Mix all ingredients in a bowl and season with salt and pepper to taste.
Keeps well in the fridge!
