It’s crazy that 2013 is coming to an end already. It’s been a big year full of exciting and life-changing things for me. It’s also been a hectic, busy and stressful at times too. I’m looking forward to making some changes to my day-to-day life to de-stress and pick back up my healthier habits. Speaking of a new year and a new start, what’s everyone doing for New Year’s Eve?!
We’re headed to a big party in Chicago complete with dancing, champagne, cocktail dresses and live music. I’m so excited, especially since my sister, her boyfriend, Rob’s sister and her boyfriend will all be in town too! As excited as I am to stay out late partying with friends, I definitely wouldn’t mind a quiet new year’s night in with just a few friends or Rob. And if we were staying in, this is what I would be making!
Not only is this about the easiest thing you can whip up for a party, it’s incredibly tasty. I wanted the plate to have a nice balance of salty, sweet, rich and light flavors and textures so a variety of different goodies.
I like to keep it simple and do two meats — I went with prosciutto & peppered salami — and two cheeses. For the cheese, I like to do with one hard cheese and one soft cheese, so I picked pecorino and a mild blue. Then I lightened the whole thing up with some dried apricots, marcona almonds, arugula, and a few slices of grilled sourdough. All you need after that is a pretty platter, some good cheese knives and a bottle (or two) of prosecco!
