When it comes to lunch, I fully admit that we are creatures of habit. I love salads, and maybe I’m weird for saying that, but they just hit the spot for me. Plus, I feel pretty great after eating them and it helps me get in my fair share of veggies everyday.

But, every so often, I get sick of eating them so I find a new obsession that I can make over and over again until I’m sick of that.

What I’ve been doing lately, is taking my go-to salad recipe and putting into a salad wrap! The flavors are the same, but something about having it in wrap form just makes it even better.

I often just use a burrito tortilla, but you could use a spinach wrap, or even one of Siete’s grain-free tortillas if you’re gluten-free.

Any who, here’s the no-recipe recipe for these delicious wraps! I can imagine they’d be great for taking to work or on a picnic lunch as well.

Healthy Salad Wrap

Ingredients

  • lettuce
  • red cabbage
  • chickpeas
  • cucumber
  • shredded carrots
  • red onion
  • feta cheese
  • rotisserie chicken
  • pepperoncini
  • quinoa
  • pepitas and hemp seed
  • avocado
  • tortilla or wrap of choice

Dressing

  • 1/2 cup red wine vinegar
  • 1 tsp grated garlic
  • 1 tsp dijon mustard
  • 1/2 cup olive oil
  • S&P to taste

Directions

You’ll notice I didn’t include amounts up here because I don’t think salads need to be exact, just do what looks good for you and your taste! For example, my husband loves cabbage more than me, so he adds more. Also, if you don’t have all these things, that’s totally fine too!

Salad wraps like this are a great way to use up and random veggies you still have left in your fridge so they don’t go to waste.

Once you’ve narrowed down your ingredients, go ahead and combine your salad ingredients in a bowl, make sure you don’t get it too big because then it won’t fit in your tortilla. If you do, you can always eat the leftovers on the side (I’ve done this before).

For the dressing, you can easily just purchase your favorite store-bought dressing, but we always make ours. It’s simple and easy and really tangy!

If you’re making this one, mix all ingredients in a jar or salad dressing bottle (we got this one and I am OBSESSED) and shake to combine. Store in the fridge.

Drizzle vinaigrette over the salad and toss to combine.

Warm tortilla in the microwave for about 30 seconds, until it starts to bubble and then pour salad in the middle and wrap it up like a burrito—you’re welcome!
