Hi! So, it’s been a while and honestly, I had no intention of showing up here again, but what I’ve learned is that you never say never.
I’ve had the urge to post again lately—not as much as for my job, but simply as a way to document life, save my family’s favorite recipes (this is really for me, ha!), and just have a little bit of a creative outlet outside of my job which is currently web design, SEO and artist—all which I am fully obsessed with! I think this new style of posting will be a little more stream of conscious like the good old blogging days, so we’ll see what happens.
To jump back in, I thought I’d share a little update of life, what’s been happening around here this summer and what we’ve got on the books for the rest of this month!
For the most part, our summer has felt relatively chill.
Our kids are still in daycare, so school goes year-round, so day-to-day life has been pretty normal. We did take a few trips though.
Back in June, we went to visit my family in Texas which was such a treat because it’d been probably over a year since my kids had visited. It was insanely hot—I swear, it was never like that when I was a kid—so, we spent most of our days at the pool, which the boys absolutely loved!
In July, we spent a week up in Snowmass, CO which was lovely. It’s always such a nice escape from city life. I had planned on it being a little more relaxed, but we were busy every day. My youngest sister lives nearby, so we visited her and her new baby.
We rode bikes up the Rio Grande trail which I highly recommend! We rented e-bikes and a trailer for the kids from Aspen Mountain Sports and stopped in Basalt for lunch. You can actually rent them and then pay a little extra to drop them at the restaurant so you don’t have to ride back up hill. Despite it being an e-bike, it was still challenging to pull my 2 kids. If you do this, you can simply take the RFTA bus back into Snowmass’ intercept lot or all the way into Aspen.
Rob and I also celebrated our 8 year anniversary at the Wild Fig in downtown Aspen. Such a great spot with awesome food and cocktails. We were so grateful for a night out together!
And, then we looked up and it was August!
This month is flying by too. We had a wedding in Chicago last weekend which was amazing. The whole weekend was basically us reliving our old lives back in Chicago. On Thursday night, we ate dinner at my favorite, Le Colonial. On Friday, Rob and I had brunch at Beatrix and then went up to wander around Southport Corridor and then had lunch at Corridor Brewery before heading home for a quick nap before the wedding.
Saturday, we were living as if we were in our 20s again. We went to Metropolitan Brewing‚ such a cool venue btw, Parson’s, Le Colonial again (unplanned, but I wasn’t mad about it), and then back to West Loop for a drink before bed.
Needless to say, I was exhausted upon coming home, but it was one of the most fun weekends we’ve had and I wouldn’t trade it for anything!
Next week, we head to London for another wedding and OMG, I can’t wait. Quick backstory—originally, I wasn’t going to be able to come because we had no one to watch our kids. My parents’ trip fell through and they graciously offered, so now I’m coming! It should be a total blast—it’s been ages since I’ve gone to Europe—I only wish we were able to stay longer.
This month is shaping up to be our busiest yet, but with summer wrapping up, I’m not mad about it! We’ll be checking off more bucket list items, going to the pool and spending time with friends before it ends!
