One of the toughest things about winter is making myself eat healthy. When it’s freezing outside, it’s so much more tempting to make something warm, cheesy and gooey like a big batch of mac n’ cheese or Irish onion soup. While we do that occasionally, it’s not a good habit to get into. Remember, I’m trying to get a booty, not a gut!

To avoid gaining that winter weight, I’ve been trying to be creative with our meals and work in extra veggies and lean protein wherever I can. This past Sunday the temperatures dropped to 15 degrees and Rob and I didn’t leave the house all day other than to walk Oliver (which was miserable). Since we were stuck inside all day, I ended up cooking a bunch! For lunch I made us one of the tastiest salads I’ve had in a long time. Rob loves Asian food, so I went with that theme and made a Thai beef salad using lots of veggies and a PRE Brands sirloin steak and O.M.G. it was so good!

If you’re not familiar with PRE Brands, it’s worth checking out! Their organic grass-fed meat comes pre-packaged and individually wrapped. I keep a few of our favorite cuts in the freezer and pull them out for dinner in a pinch.

What I loved about this salad was that it was light, but still filling and packed with a lot of textures, flavors and colors — all things that make up a good salad in my book. The sesame lime vinaigrette added a much-needed winter kick and had me dreaming of warmer days. Rob loved it too!

The other thing that I absolutely love about PRE Brands is that each package gives you the ideal cooking times of the steak on the back. I always think that steak can be a bit intimidating to cook, anyone else? I used a cast iron grill pan (perfect for apartment dwellers) on medium heat using the suggested times and the steak turned out perfectly!

Healthy Thai Beef Salad

Ingredients

Vinaigrette:
2 limes, juiced
1/3 cup olive oil
2 Tbsp sesame oil
1 Tbsp honey
1 tsp low sodium soy sauce
2 Tbsp chopped cilantro
1 tsp sriracha sauce
salt & pepper to taste

For the Salad:
1 PRE Beef sirloin steak
3 handfuls of mixed greens
1/3 cucumber, seeded and sliced
1/4 cup sliced red onion
1/2 avocado, cubed
1 small carrot, shredded
2 Tbsp cilantro, chopped
2 Tbsp mint, chopped
2 Tbsp crushed peanuts

Directions

Season the steak with salt and pepper. Heat a grill pan or grill to medium heat.
When hot, cook the steak 5 minutes on each side or until desired doneness.
Remove from the grill, cover with foil and let rest for 10 minutes before slicing.
Meanwhile combine all the vinaigrette ingredients in a jar and shake to combine.
Combine all the remaining salad ingredients through mint and toss with a drizzle of the vinaigrette.
Top with sliced sirloin steak and crushed peanuts.
