Even if you eat super healthy, I think we can all agree that getting more veggies in isn’t a bad thing!

But, honestly, even though I consider myself a healthy eater, sometimes I look back at my day and realize I haven’t had as many veggies as I thought I did. I know much better I feel infinitely better when I’m eating more whole foods, veggies, fruits and less gluten and dairy. My skin looks better, I have more energy, I sleep better, I get less brain fog, I don’t get as bloated, and overall I just feel amazing!

Sometimes I mix in veggies into my egg scramble or load up an omelet with veggies or even have a breakfast salad—sounds weird, but it’s actually so good and yummy, especially in the summer!

Despite knowing how great all those extra veggies make me feel, I still mess it up some days (more than I’d like to admit).

This past year, I’ve fallen into a good routine of making a green smoothie every single morning. It’s actually one of my easiest wellness habits to maintain because they’re soooo yummy!

Usually that ends up being my whole breakfast and I’m always shocked by how full I am. The key is getting the right balance of macronutrients in there to keep you full and satiated without spiking your blood sugar. If you have too much fruit in there and not enough of the other stuff, a blood sugar spike can easily happen.

My morning smoothies include 1/2-1 cup of frozen cauliflower and a HUGE handful of spinach. You can also add other greens, but personally, I love adding spinach because you can’t taste it at all. I sometimes will add a little kale, but I find that kale is hard on my stomach so if I add kale, I’ll do half kale and half spinach.

What I really love about my veggie-packed smoothie is that it’s so quick, easy and so delicious. Honestly, it tastes like I’m eating a milkshake for breakfast, but it has no added sugar or sweeteners and is made from real ingredients. It makes our mornings calmer because it takes just a few minutes to put together. Mornings are already hectic enough getting Owen out the door and Rob running off to catch his train.

It’s nothing crazy, but it’s made my morning less stressful, quicker and more nutritious! I mean, what other breakfasts give you a whole serving (sometimes two!) of greens and a whole serving of cauliflower?!

One thing I’ve found to be key is a great blender. I know it can feel crazy to spend a lot on a blender, but a quality one makes all the difference. I used to have a $40 one from Amazon that I thought was great, but the cauliflower was always a little chunky, you could see specks of spinach and it was just never that smooth.

I finally splurged on a Vitamix and it has been a gamechanger! Worth every single penny, especially if you make smoothies every day like me! I got the refurbished A2600 and it’s basically brand new! The smoothie setting on it is incredible. It’s slower at first to break up big chunks, then goes into hyperdrive to make it super smooth—it’s genius and works like a charm!
