It’s officially summer, right? Well if not today, then tomorrow definitely is. And what better way to kick off summer than with some tasty summer treats?
As much as I love ice cream in the summer, I hate the feeling of heavy cream sitting in my stomach on a hot day. Am I right? I’ve been wanting to try and make my own frozen Greek yogurt for quite some time now and I finally took the time to do some reserach and get to it.
What I quickly realized is that you can take this stuff and literally make any flavor you want! The real key in making frozen Greek yogurt is using full fat yogurt. If you use non-fat yogurt you might as well be trying to cut a brick with a spoon. The fat in the yogurt keeps it from freezing too hard and making it really icy. At the end of the day, you’re still eating something much healthier than ice cream.
So now to make it! You’ll need 32oz. full-fat Greek yogurt. I used honey-flavored yogurt, but vanilla would also be really great. If you can’t find either of those, plain will work, but you might try adding some sugar and/or vanilla extract to cut the tang a bit. I also added a quarter cup of sugar and 2 cups of fresh chopped berries — raspberries and strawberries. Definitely don’t use frozen here, the fresh make all the difference in the world.
Mix it all up in a bowl and refrigerate it for several hours. Then pour into your ice cream maker and freeze according to directions. Scoop it into a freezer-safe container and freeze for several more hours before eating. Although it’s pretty good right when it comes out of the ice cream maker!
