Growing up in Texas, Tex-Mex was my favorite thing to go out to eat, and as an adult, it’s something I seriously miss. Chicago and Denver (cities we’ve called home) both have a good food scene, but nothing will compare to the real deal in Texas. 

One of my favorite Tex-Mex dishes is fajitas. Not only do they taste delicious, but I always loved the “build your own” concept where you get to make your own and top it with whatever you like—just as you see fit. 

The thing that makes this sheet pan chicken fajitas recipe different from the rest, is the addition of potatoes. Before you right this off, you need to try it. One of my favorite spots in Texas serves it this way and it is so delicious.

This is an easy and fun dinner for busy weeknights, and would be great for a small dinner party and ideal for busy families! Just slice up your chicken and stick the sheet pan in the middle of the table and serve the toppings, tortillas and any sides family style! Just make sure you protect your table before putting a hot baking sheet on it!

Why Sheet Pan Fajitas?

Typically fajitas are made on the grill, but for weeknight meals when you’re in a rush and don’t have time or the energy to fire up the grill, the oven is perfect.

This allows you to cook a delicious and flavorful meal on one pan—less dishes and less hands-on time making this dish. So yes, technically you can do this on the grill, but this method is simple and foolproof and doesn’t require you to keep an eye on the grill constantly.

What Kind of Sheet Pan to Use

A rimmed baking sheet, also known as a sheet pan, is an essential tool for any kitchen and an absolute necessity for sheet pan meals like these sheet pan chicken fajitas. Its raised edges are what set it apart from a regular baking sheet and make it perfect for meals like this one so the ingredients don’t fall off the sides.

The raised edges prevent spillage and keep food contained, whether you are roasting vegetables, baking cookies, or toasting nuts. Without the rim, liquids and oils can easily run off the sides and onto the bottom of your oven, creating a mess and potentially causing a fire hazard.

Additionally, the rimmed edges provide a sturdy grip for handling the pan, especially when hot, and also make it easier to transfer the pan into and out of the oven without losing or damaging your food.

The rimmed baking sheet is not only versatile but also durable, making it suitable for heavy-duty tasks like broiling, roasting, and even serving as a makeshift pizza stone for homemade pizza nights!

Sheet Pan Chicken Fajitas Recipe

If you’re getting bored of your standard taco Tuesday, get ready for a nice little change up with this one! This recipe is perfect for busy evenings when you need a satisfying meal in a hurry. The best part is that everything cooks on just one pan, making for easy cleanup as well. Who doesn’t love that?

To start, you’ll need to gather your ingredients, including chicken breasts, bell peppers, onions, and some simple seasonings that pair so well with fajitas.

Preheat your oven and grab a baking sheet pan—you can even line it with parchment paper for easy cleanup if you want. You’ll toss all your ingredients in seasonings and add to the pan in a single layer at the right time and cook! 

After just a short time in the oven, you’ll have tender and juicy chicken, while the peppers and onions will be perfectly roasted and caramelized.The potatoes are crisp and add such a unique flavor and texture to the whole meal.

Finish by slicing chicken breasts or chicken thighs and serving it all on the baking sheet so everyone can build their own. Serve the fajitas with your favorite toppings like guacamole, and salsa, and enjoy this easy dinner!

Ingredients for Sheet Pan Fajitas

For this dish, you will need the following ingredients: chicken, onion, bell pepper, potatoes, and tortillas. Technically you can skip the potatoes, but I highly suggest you include them—they’re so good! And if you’re trying to eat less animal protein, that can help!

You can season your chicken in advance and get all your vegetables prepared and toppings prepped ahead of time to make your prep time even faster on the night of.

  • Boneless Chicken Breasts, you can also use chicken thighs if you prefer
  • Red or Yellow Onion
  • Red Bell Pepper (green or yellow bell peppers will work too, if you can’t find bell peppers, poblanos would be a great stand-in)
  • Fingerling Potatoes (small red or Yukon gold potatoes would work, even a small russet potato)
  • Tortillas (corn or flour tortillas or grain-free tortillas—whatever you prefer! even lettuce wraps)
  • Optional Toppings: guacamole, salsa, pico de gallo, shredded cheese, cilantro, sour cream, lime juice

Sheet Pan Chicken Fajitas

Ingredients
  

  • olive oil
  • 6-8 fingerling potatoes, halved lengthwise
  • 2 1/2 teaspoons adobo seasoning, divided
  • 1/2 teaspoons ground cumin
  • 3 skinless chicken breasts
  • 1 teaspoon smoked paprika adds great smoky flavor
  • 1 medium red onion, sliced
  • 1 bell pepper, sliced
  • kosher salt and black pepper to taste
  • corn tortillas, flour tortillas or grain-free tortillas
  • guacamole, optional garnish
  • salsa or pico de gallo, optional garnish
  • shredded cheese, optional garnish
  • chopped fresh cilantro, optional garnish

Instructions
 

  • Preheat oven to 425 degrees.
  • Toss potatoes with 1/2 teaspoon adobo seasoning, all the cumin and olive oil.
  • Spray with cooking spray and place on the baking sheet and add to preheated oven. Cook for 7 minutes.
  • While that cooks, place chicken breasts in the bowl the potatoes were in, add a little more olive oil, the remaining 2 tsp adobo seasoning and smoked paprika. Toss to coat.
  • Add to oven and place back in oven for another 15 minutes of cooking.
  • After 15 minutes have passed, add onions and peppers with a little olive oil, salt and pepper and mix with the potatoes. Cook for another 10 minutes until the thickest part of the chicken reaches 165 degrees with a meat thermometer.
  • Remove from oven when done and let sit for 5-10 minutes to rest. Slice chicken on a cutting board and add back to sheet pan and serve family style with tortillas and garnishes of choice.

Toppings for Chicken Fajitas

When it comes to topping your chicken fajitas, the options are endless! This is why I love this meal so much. Everyone can customize their fajitas to their own liking.

Grab a warm tortilla, add chicken, potato and vegetables. Then start with a scoop of guacamole, made from perfectly ripe avocados or purchased from the prepared area of the store—that’s what we typically do. I love the smooth texture and flavor of guacamole with the sizzling chicken and veggies.

Next, add a scoop of fresh pico de gallo, a zesty combination of diced tomatoes, onions, jalapeños, and cilantro. This chunky salsa adds a burst of freshness and tang to every bite.

Sprinkle on some chopped cilantro for a pop of bright, citrusy flavor. The herbaceous notes of cilantro add a layer of complexity to the fajitas, balancing out the richness of the other toppings. One of my favorites, plus cilantro is great for detoxifying your body, so it’s a good healthy addition to any meal.

For a touch of heat, drizzle on some salsa. Your pico de gallo may be enough, but you can always swap these for each other depending on what you have on hand.

Finish off with a sprinkle of shredded cheese. My family isn’t big on cheese, but I do like a little on mine. It adds a creamy, melty touch to make each bite pretty dang incredible.

Lastly, you can serve a little plate of sliced lime wedges. Fresh lime juice to finish your fajitas adds such a nice, bright, citrusy note to your weeknight dinner.

What To Serve With Chicken Fajitas

When it comes to serving chicken fajitas, there are plenty of delicious sides to consider. 

One of the most popular and traditional sides to serve with chicken fajitas is Spanish rice and refried beans. While this is great, personally I find this to be more time intensive and is something I would save for a dinner party.

For weeknights, we toss whatever lettuces we have, thinly sliced onion and avocado slices with a simple vinaigrette and serve it alongside. It’s a nice, fresh and light side that lets you get in those extra greens!

I also typically serve some chips, salsa and guacamole on the side. It takes me back to my hometown! I do have to remind the kids to eat their fajitas first, so proceed at your own risk!
